Chrissy & Frank

My cousin Chrissy and her new husband Frank held their day after reception at Armstrong Farms yesterday. It was a gorgeous day! Below are a few details shots that I took.

They had the most delicious variety of cupcakes!




Craig was having fun experimenting with the new lens that I bought him.

He shot this of me and I really like it... I'm 26 weeks.

Look at Ma, isn't she pretty!



Here is Chrissy with her best friend Wendy. Turns out that Wendy is a real person, which was quite a relief... you see, I've heard about her for years, but had never actually met her.

Favorite Things

I'm thinking of adding a category to our blog of my favorite things. And the topic today is sheets!

My Mom bought me the MOST WONDERFUL sheets for my birthday. She ordered them from Domestications, they are cashmina micro plush and they are sooooo cozy. Somehow, they ended up on Ella's bed, so I actually had to order another set for Craig and I.

Little enjoys them as well.

This crazy cat always has to be in the middle of the action. While I was trying to take Ella's picture, she placed herself between Ella and the camera.

Bummer

Had my monthly visit with my OB today and he indicated that my AFP levels are elevated. The alpha-fetal protein could indicate possible birth defects. He didn't really seem concerned since my ultrasound looked good, but it still has me a little worried. I'll be going for another level II ultrasound with the high risk doctor shortly. We appreciate your prayers... if not for the baby, then for my mental sanity!

Oreo Truffles

It's no secret that I love to bake... mostly cookies and sweets. Anyway, I'm often asked for my recipes so I thought I would start taking pictures and posting the recipes on our blog. You can quickly view all the recipes that I post by clicking the label located at the top right of the blog.

With any recipe that I post, please feel free to post comments about what you liked or didn't like about it. And if you try one of the recipes, please comment as to it's difficult and result.

Below are Oreo Truffles, they are delicious and pretty easy to make... albeit a little time consuming.



1 pkg. (1 lb., 2 oz.) OREO Chocolate Sandwich Cookies, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 pkg. (8 oz. each) BAKER'S Semi-Sweet Baking Chocolate, melted

CRUSH
9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.

DIP balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.

REFRIGERATE until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

I used low fat Oreo's and 1/3 less fat cream cheese and the taste was still great. I try to substitute lower fat products when I can.

Chewy Caramel Bars

These are pretty good as well, but I'm not so sure I will exactly follow the recipe next time. I didn't seem to have enough batter (maybe put down too much for the crust?), and it was pretty thick. I may try adding a bit more evaporated milk next time.



1 pkg. yellow cake mix
1 can (5 ounces) evaporated milk
1/2 cup chopped nuts
1/4 butter, melted
36 Rolo candies, halved

Combine the cake mix, milk, nuts and butter in large bowl. Spread half into greased 13in x 9in baking pan.

Bake at 350 for 13-15 minutes or until set.

Place candies, cut side down, over crust; top with remaining cake mixture.

Bake 25-30 minutes or until light golden brown.

Cool on wire rack, cut into bars.

Spent most of Labor Day clearing the woods behind our house for BYOP, but later that day we went to the farm for a picnic.

Weekend fun!

Saturday we went to McConnell's Mills State Park with my parents for a picnic and some hiking. It was absolutely perfect day.
